I’ve loved cheesecake for as long as I can remember. I still make them occasionally, but let’s be honest: crushing biscuits, melting (vegan) butter, pressing the base into a springfrom pan, preparing the cheesecake filling… it’s a lot of work.
Still, over the years I developed my own favourite recipe—a real winner—which I hope to share with you soon(-ish).
When my mother-in-law introduced me to tiramisu, I was not immediately impressed. While I liked it well enough, the coffee was a deal-breaker for me.
So I started looking for recipes but all those steps… Separating eggs, beating egg whites into stiff peaks, brewing and cooling espresso, dipping half a million individual biscuits into cold espresso (or whichever liquid I would decide to use)…
Who has time—and energy—for all of that? Not me!
Still, a guy can dream.
So, the other day, while I was drooling over photos of tiramisu cups, I noticed something: broken biscuits instead of whole lady fingers. And something clicked.

This recipe uses just three basic ingredients: gluten-free oreo-style biscuits, vegan vanilla quark alternative, and Dutch cocoa powder. Plus dark rum as an optional fourth ingredient.
Substitution note
I’m using Alpro Vanilla Quark Alternative, which is readily available in the Netherlands. If vegan quark isn’t available where you live, a thick vegan Greek-style yoghurt would be a good substitute—just add a few drops of vanilla extract and sweetener to taste.
