Easy Red Lentil Soup

This easy red lentil soup is a simple vegan comfort soup made with pantry staples. Filling, budget-friendly, and ready in about 30 minutes, it’s perfect for low-energy days or batch cooking.

Ingredients
  

  • 1 onion peeled and chopped
  • 1 tin tomato puree
  • garlic to taste
  • olive oil or other neutral cooking oil
  • cumin
  • coriander
  • vegan bouillon powder
  • 2 l water
  • 3 cups red lentils rinsed

Instructions
 

  1. Fry onion in olive oil until tender
  2. Add a little water
  3. Add garlic, cumin, coriander, and bouillon powder
  4. Rinse and add lentils
  5. Add tomato puree and the rest of the water
  6. Stir well
  7. Bring to the boil, lower heat, and simmer on a low heat for about 30 minutes, or until lentils are tender
  8. You can also make this soup in the slow cooker: place ingredients in slow cooker insert and cook on low for 4-5 hours, or on high for 2-3 hours.
    To make this soup in the Instant Pot: pressure cook for 10 minutes, then allow 10 minutes natural release before venting.
