Instant Pot Dump Dinner

It’s been a busy day and I hadn’t even thought about supper yet. I also had not done a lot of meal prepping last weekend, because it was simply too hot. I don’t tolerate heat well.

So now it was half seven, and I had yet to figure out what to eat for supper. I wanted something quick and easy. The easy bit being the most important. Something hands-off would be nice too, so I could just go back to being a couch potato while my food took care of itself.

Hands-off meant either Instant Pot or Slow Cooker. Quick meant Instant Pot.

My mind searched my kitchen cupboards and fridge. Rice, lentils, veggies. I could do that.

And so my Instant Pot Dump Dinner was born. It was delicious. And I’ve got plenty leftover to help me through the next couple of days.

Ingredients

  • 1 cup brown rice
  • 1 cup green lentils
  • 2 cups veggies (I used red and orange bell peppers and courgette)
  • a handful mushroom slices
  • garlic powder
  • curry powder
  • salt, pepper and herbs to taste

Directions

Clean veggies and cut them into small chunks (or use pre-cut veggies from you freezer, which is what I did). Dump all ingredients in your Instant Pot and add 2 cups of water. I also threw in some leftover potatoes.

Pressure cook for 16 minutes, allow 5 minutes for a natural release, then manually release the rest of the pressure if you’re in a hurry to eat. Otherwise, just wait till all the pressure has released manually. It’s less messy that way.
