This avocado mayonnaise is a simple, yet elegant companion to your oven roasted veggies, chips, crisps and whatnot.
- 1 small avocado, or ½ medium sized avocado
- ½ cup of vegan mayonnaise
- juice of ½ a lemon
- garlic, salt and pepper to taste
Cut avocado in half vertically. Twist halves until one half detaches from the pit. Gently hack a knife into the pit and pull it out.
Scoop out the avocado flesh and put it in a jug or blender. Add vegan mayonnaise, lemon juice, garlic and your seasonings.
